Green Beans

So I am stealing this one from my newest Cousin-in-Law....Thanks Audrey!!!

1 Bag of Fresh Green Beans (the ones that you can steam in the bag)

follow directions on the bag and when finished cooking in microwave sprinkle with olive oil, Italian Seasoning, Garlic Salt and Pepper.

These Green Beans were so yummy we couldn't get Aiden to stop eating them!!!!

Audrey says this same idea works real well with Brocolli too!!!

Bake Chicken and Mashed Taters

4 Boneless Skinless Chicken Breast
1 Box Oven Fry
1tbsp Red Pepper Flakes
1/4 cup Parmesan Cheese
Garlic Salt to taste
Pepper to taste
1 Egg
Dash of Milk

Mix the Oven Fry, Red Pepper Flakes, Garlic Salt and Parm Cheese together in a bowl or on a plate.  Beat th egg and mix with a dash of milk season mixture with pepper in a seperate bowl.  Dip Cleaned chicken in egg mixture and then bread.  Place in a greased pan and bake at 375 for about 45minutes. 

Serve with Mashed Potates and Gravy and Green Beans. 

You can substitute Pork for the chicken if you like.  This is one of Jimmy's favorite meals and if I ask him what he wants for dinner 9 times out of ten he will say Chicken and Taters.  For the taters I use Yukon Gold and leave the skin on them.  Mix with butter, milk and a little Parm cheese.

Chicken Enchilada Rice

Recipe is courtesy of my cousin. 

1 Large Can of Green Enchilada Sauce
3 B/L S/L Chicken Breast or 1 pkg B/L S/L Chicken Thighs
1 can of corn
2 cups Cheese
White Rice (follow directions on box)

In Crockpot on low put chicken and Enchilada Sauce.  Cook for 8 hours. 

While cooking your rice on the stove top turn crock pot off and add 1 can of drained corn and cheese.  Cover the crock pot with lid. 

Serve chicken mixture over rice and enjoy.

Tamales Review

First off let me say these were a lot of work, I compare it to a day of making Christmas  Cookies.  Just like making cookies we make mistakes our first time out of the gate.  But we had a TON of fun.  It was an experience I can't wait to have again.  Jimmy's mom and dad came over and helped. The boys did most of the tamale folding while the ladies kept Aiden busy and went for a walk. hahaha.  We did add another bag of chili and made a run for another 5lb bag of Prepared Masa!!!!!  (Hence my mistake...I bought unprepared masa so some of the tamales are real hard)

Red Chile and Pork Tamales

OK...so we are going to do it...tomorrow we are making tamales.  Here is how we are gonna do it...pics and review to come tomorrow
MEAT
7Lbs Pork Shoulder
4-5Cloves of Garlic
2 Beers
Salt and Pepper
Put in Crockpot over night...in the garage so I don't have to smell it...hahaha
HUSKS
Soak Husks in water overnight so they are soft.
CHILI
1lb of New Mexico Chili
Garlic
Salt
Boil Chili for an hour and leave in water for 30minutes.  Put in blender and blend with salt and garlic.  Add water for proper consistancy.
MASA
7lbs of Masa
Juice from Pork
Salt
Mix together to flavor masa.  Spread masa on rough side of husk, fill with meat and wrap up husk.  Steam and enjoy!!!!

I am super excited about this but kind of nervous too!!!

Welcome

I have decided that I am going to start a recipe blog.  I am going to attempt at least one yummy recipe a week and try to get pics of the outcomes. 
It has been my experience that yummy food is 25% recipe, 25% ingredients and 50% heart.  Everything I make I make with a ton of love and appreciation for the people I am feeding. 
My recipes will include some recipes I have taken from others, some of my very own and some I am attempting to perfect.
